I sat on a plastic-steel chair and waited for food to arrive on the rough wooden plank. I had ordered a <strong>Rajasthani Thali<\/strong> (Pre portioned plate). There were <strong>bouts of tsunamis<\/strong> in my mouth just anticipating the food. <\/span><\/div>\n<\/div>\n<\/div>\n<div><\/div>\n<div>\n<figure id=\"attachment_10308\" aria-describedby=\"caption-attachment-10308\" style=\"width: 823px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"alignnone size-full wp-image-10308\" src=\"http:\/\/asoulwindow.com\/wp-content\/uploads\/2017\/11\/img_3796.jpg\" alt=\"IMG_3796\" width=\"823\" height=\"614\"><figcaption id=\"caption-attachment-10308\" class=\"wp-caption-text\">Rural staple- Bajre ki roti with curries and lentils. The Thali had <strong>Baati , chopped radish , spiced up chillies, dal (lentils) , kadhi,<\/strong> and a very spicy and oily curry. <\/span><span>I enjoyed dipping the <em>baati<\/em> in the assorted gravies. <em>Baatis<\/em> are thick spherical Rajasthani breads. <\/span><\/div>\n<\/div>\n<\/div>\n<div><\/div>\n<div>\n<figure id=\"attachment_10301\" aria-describedby=\"caption-attachment-10301\" style=\"width: 614px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"alignnone size-full wp-image-10301\" src=\"http:\/\/asoulwindow.com\/wp-content\/uploads\/2017\/11\/img_3596.jpg\" alt=\"IMG_3596\" width=\"614\" height=\"922\"><figcaption id=\"caption-attachment-10301\" class=\"wp-caption-text\">Do try the<em> <strong>&#8216;meetha sev&#8217; <\/strong><\/em>The sweet is available in other parts of North India in winters as well. Incredible India!<\/figcaption><\/figure>\n<\/div>\n<div>\n<div class=\"\">\n<div><\/div>\n<div class=\"_1mf _1mj\"><span>Baatis are wheat dough rolled into balls and baked in <strong>wood fired oven.<\/strong> In some version they are baked in the heat of smouldering <em><strong>\u2018kandiya\u2019 aka \u2018upla\u2019<\/strong><\/em> (dried cow dung cakes). It made me crave for one of those <em>al fresco<\/em> winter bonfire parties at my home in <a href=\"http:\/\/asoulwindow.com\/2016\/08\/31\/pink-teasamovar-and-other-secrets-in-search-of-vegetarian-food-in-lucknow-during-ramadan\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>Lucknow<\/strong> <\/a>where we roast sweet potatoes, potatoes, paneer tikka , <em><strong>baati chokha<\/strong> <\/em>etc. It tastes best on a chilly winter night. Incredible India!<\/figcaption><\/figure>\n<\/div>\n<div>\n<div class=\"\">\n<div class=\"_1mf _1mj\"><span>Before it turned dark, I was back in Pushkar and had to leave for <strong>Udaipur<\/strong> the same night. It was an impromptu decision by me as I didn\u2019t see any logic in staying in Pushkar for three consecutive days. So I sacrificed the events of my third day to accommodate another gem of a city Udaipur. I still had time and was hungry too. I came across a cart selling<em><strong> \u201cFarash, Sugar, Kean, Gus\u201d<\/strong> <\/em>(I am copying it verbatim here). Before you even begin to think it is some <a href=\"http:\/\/asoulwindow.com\/2017\/10\/21\/a-locals-guide-to-best-vegan-food-in-vadodara-in-budget-gujarat-incredible-india\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>exotic dish<\/strong><\/a>, let me demystify the code language here. After applying spell check it should read, \u201cFresh Sugar Cane Juice\u201d. <\/span><\/div>\n<div><\/div>\n<div>\n<figure id=\"attachment_10317\" aria-describedby=\"caption-attachment-10317\" style=\"width: 921px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"alignnone size-full wp-image-10317\" src=\"http:\/\/asoulwindow.com\/wp-content\/uploads\/2017\/11\/img_5404.jpg\" alt=\"IMG_5404\" width=\"921\" height=\"566\"><figcaption id=\"caption-attachment-10317\" class=\"wp-caption-text\">The &#8216;Fresh sugarcane juice&#8217; board had so many spelling mistakes for me to digest. Incredible India!<\/figcaption><\/figure>\n<\/div>\n<div class=\"_1mf _1mj\"><span>Rejecting the idea, I instead opted for <strong>hot sweetened milk topped with frothy cream.<\/strong> It was served straight from a huge iron\u2018<em>kadahi<\/em>\u2019 (wok), still simmering romantically over gentle heat. It\u2019s the <strong>perfect drink<\/strong> for a North Indian winter evening.<\/span><\/div>\n<\/div>\n<\/div>\n<div><\/div>\n<div>\n<figure id=\"attachment_10310\" aria-describedby=\"caption-attachment-10310\" style=\"width: 922px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"alignnone size-full wp-image-10310\" src=\"http:\/\/asoulwindow.com\/wp-content\/uploads\/2017\/11\/img_4195.jpg\" alt=\"IMG_4195\" width=\"922\" height=\"614\"><figcaption id=\"caption-attachment-10310\" class=\"wp-caption-text\">Sinfully delicious sweet Malpua. Incredible India!<\/figcaption><\/figure>\n<\/div>\n<div><\/div>\n<div>\n<div class=\"\">\n<div class=\"_1mf _1mj\"><span>Then I dunked my fingers in sticky sugar syrup while trying to get hold on the fresh hot \u2018<strong><em>Malpua<\/em><\/strong>\u2019 (A sweet pancake dipped in sugar syrup). It had me drooling and begging for more. But I was anticipating more <strong>gastronomic orgasms<\/strong> in the offing, so I had to keep space in the stomach.<\/span><\/div>\n<\/div>\n<\/div>\n<div><\/div>\n<div>\n<figure id=\"attachment_10303\" aria-describedby=\"caption-attachment-10303\" style=\"width: 922px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"alignnone size-full wp-image-10303\" src=\"http:\/\/asoulwindow.com\/wp-content\/uploads\/2017\/11\/img_3608.jpg\" alt=\"IMG_3608\" width=\"922\" height=\"614\"><figcaption id=\"caption-attachment-10303\" class=\"wp-caption-text\">Local snacks. Incredible India!<\/figcaption><\/figure>\n<\/div>\n<div><\/div>\n<div>\n<div class=\"\">\n<div class=\"_1mf _1mj\"><span>After having packed my bag and checking out of my hotel, I rushed to the roadside Dhaba-ish restaurant I had been eyeing for the past two days. I ordered the combo of <em><strong>Makke di roti, Sarso Ka Saag<\/strong> <\/em>and <strong><em>Lassi<\/em> <\/strong>(Corn\/Maize bread, Green Mustard leaves curry and a thick sweetened Yoghurt drink). It was served with roughly chopped onions and green chillies. I ordered <em><strong>Lassan Chutney<\/strong> <\/em>(Garlic chutney) as well. It exceeded my expectations. It was definitely the best makke di roti and sarso ka saag I have had in my entire life. <\/span><\/div>\n<\/div>\n<\/div>\n<div><\/div>\n<div>\n<figure id=\"attachment_10311\" aria-describedby=\"caption-attachment-10311\" style=\"width: 829px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"alignnone size-full wp-image-10311\" src=\"http:\/\/asoulwindow.com\/wp-content\/uploads\/2017\/11\/img_4206.jpg\" alt=\"IMG_4206\" width=\"829\" height=\"614\"><figcaption id=\"caption-attachment-10311\" class=\"wp-caption-text\">The best <strong>makke ki roti, sarso ka saag<\/strong> (Corn bread, mustard leaves curry) ever. Incredible India!<\/figcaption><\/figure>\n<\/div>\n<div>\n<div class=\"\">\n<div class=\"_1mf _1mj\"><span>Though <em>makke ki roti and sarso ka saag are <\/em>essentially Punjabi dishes yet is popular in most <a href=\"http:\/\/asoulwindow.com\/2016\/03\/20\/rediscovering-chandni-chowk-beyond-the-obvious\/\" target=\"_blank\" rel=\"noopener noreferrer\">North Indian cities. <\/a>The butter drizzled on the <em>sarso ka saag<\/em> gave it that added zing.<\/span><\/div>\n<div><\/div>\n<\/div>\n<\/div>\n<div>\n<figure id=\"attachment_10312\" aria-describedby=\"caption-attachment-10312\" style=\"width: 922px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"alignnone size-full wp-image-10312\" src=\"http:\/\/asoulwindow.com\/wp-content\/uploads\/2017\/11\/img_4208.jpg\" alt=\"IMG_4208\" width=\"922\" height=\"614\"><figcaption id=\"caption-attachment-10312\" class=\"wp-caption-text\">I have failed to find lassan chutney (Garlic sauce) as delicious as this one. Incredible India!<\/figcaption><\/figure>\n<\/div>\n<div><\/div>\n<div>\n<div class=\"\">\n<div class=\"_1mf _1mj\"><span>It was the first time that I had <em>Lassan Chutney<\/em> and must say I am big fan since. Post this dinner, I have tried to find similar tasting <em>lassan chutney<\/em> in restaurants elsewhere with zilch success. It was deep red in color and had a pungent spicy taste to it. I ordered <strong>buttered <em>Baajre ki roti<\/em><\/strong> (Bread made from <strong>Pearl millet,<\/strong> very popular in states of Rajasthan, Haryana, <a href=\"http:\/\/asoulwindow.com\/2016\/10\/25\/madhya-pradesh-tourism-mart-2016-a-great-idea-to-boost-tourism\/\" target=\"_blank\" rel=\"noopener noreferrer\">Madhya Pradesh<\/a>, <a href=\"http:\/\/asoulwindow.com\/2017\/07\/08\/weekend-trip-from-delhi-tracing-begum-samrus-footprints-in-sardhana-near-meerut\/\" target=\"_blank\" rel=\"noopener noreferrer\">Uttar Pradesh<\/a> and <a href=\"http:\/\/asoulwindow.com\/2016\/12\/12\/rann-utsav-all-you-wanted-to-know-about-rann-of-kutch-plus-a-bonus-itinerary-and-excursion-ideas\/\" target=\"_blank\" rel=\"noopener noreferrer\">Gujarat<\/a>) to go with it. The sweet <em>lassi<\/em> was the perfect antidote to all things spicy. <\/span><\/div>\n<\/div>\n<\/div>\n<div><\/div>\n<div>\n<figure id=\"attachment_10316\" aria-describedby=\"caption-attachment-10316\" style=\"width: 922px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"alignnone size-full wp-image-10316\" src=\"http:\/\/asoulwindow.com\/wp-content\/uploads\/2017\/11\/img_5372.jpg\" alt=\"IMG_5372\" width=\"922\" height=\"614\"><figcaption id=\"caption-attachment-10316\" class=\"wp-caption-text\"><strong><em>Gatte ki sabzi<\/em><\/strong> with steamed rice was also amazing. Incredible India!<\/figcaption><\/figure>\n<\/div>\n<div>\n<div class=\"\">\n<div class=\"_1mf _1mj\"><span>It was heavy, filling and delicious. The breads were warm and crisp as they were taken out <strong>fresh from a wood fired oven<\/strong> tended by the <a href=\"http:\/\/asoulwindow.com\/2017\/03\/24\/mygrationsw-why-this-brave-woman-lives-alone-in-a-forest-in-mukteshwar-uttarakhand\/\" target=\"_blank\" rel=\"noopener noreferrer\">women of the house. <\/a>This open kitchen sort of added to the ambience and the whole dining experience of Rajasthan. Perhaps, it is this personal touch of local women which gave the dishes their taste and authenticity. The restaurant\u2019s name is <em><strong>\u201cShree Karani Maa Restaurant\u201d<\/strong> <\/em>The huge green dot in a square (Can\u2019t thank animal activist Maneka Gandhi enough for this innovative idea) screamed that it is a <em><strong>\u2018Shudh shaakahari bhojanalaya\u2019<\/strong> <\/em>(Pure vegetarian eatery-<strong>vegan <\/strong>food also available here!).<\/span><\/div>\n<\/div>\n<\/div>\n<div><\/div>\n<div>\n<figure id=\"attachment_10309\" aria-describedby=\"caption-attachment-10309\" style=\"width: 601px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\" size-full wp-image-10309 aligncenter\" src=\"http:\/\/asoulwindow.com\/wp-content\/uploads\/2017\/11\/img_3992.jpg\" alt=\"IMG_3992\" width=\"601\" height=\"863\"><figcaption id=\"caption-attachment-10309\" class=\"wp-caption-text\">Food at Pushkar Fair, Rajasthan. Incredible India!<\/figcaption><\/figure>\n<\/div>\n<div>\n<div class=\"\">\n<div class=\"_1mf _1mj\"><span>The ambience ain\u2019t anything to write home about. Come here rather for the authentic <strong>rural cuisine<\/strong> at its best and at a throwaway price. My bill for all the orders didn\u2019t exceed Rs.150\/-. It\u2019s located near the famous <strong>Brahma temple.<\/strong> Just take a right turn just before you reach the temple and you will see a lane dedicated to roadside eatries. Dodge the other eateries that mark the street (and attract more customers maybe because of being the first in the lane), and head to this restaurant for that perfect meal. You will not be disappointed! <strong>So impressed I was with the food that<\/strong> after the meal, I had to go to the restaurant manager and thank him for such lovely dinner. <\/span><\/div>\n<div><\/div>\n<div>\n<figure id=\"attachment_10305\" aria-describedby=\"caption-attachment-10305\" style=\"width: 835px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"alignnone size-full wp-image-10305\" src=\"http:\/\/asoulwindow.com\/wp-content\/uploads\/2017\/11\/img_3670.jpg\" alt=\"IMG_3670\" width=\"835\" height=\"614\"><figcaption id=\"caption-attachment-10305\" class=\"wp-caption-text\">Hot Poha anyone? Incredible India!<\/figcaption><\/figure>\n<\/div>\n<div class=\"_1mf _1mj\"><span>Hungry for more, the day I returned from Udaipur, I returned to the same restaurant for an authentic Rajasthani lunch, <em><strong>Gatta masala<\/strong> <\/em>with steamed rice. <em>Gatta masala<\/em> is gram flour paste cut in different shapes such as square\/ diamond\/rectangle and dipped in a yogurt based tangy curry. It\u2019s the signature vegetarian dish of Rajasthan and very delicious. <em><strong>Daal Baati Choorma<\/strong> <\/em>is also a must try here.<\/span><\/div>\n<\/div>\n<\/div>\n<div><\/div>\n<div>\n<figure id=\"attachment_10314\" aria-describedby=\"caption-attachment-10314\" style=\"width: 922px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"alignnone size-full wp-image-10314\" src=\"http:\/\/asoulwindow.com\/wp-content\/uploads\/2017\/11\/img_5285.jpg\" alt=\"IMG_5285\" width=\"922\" height=\"614\"><figcaption id=\"caption-attachment-10314\" class=\"wp-caption-text\">Free <em>langar<\/em> food. Incredible India!<\/figcaption><\/figure>\n<\/div>\n<div>\n<div class=\"\">\n<div><\/div>\n<div class=\"_1mf _1mj\"><span>On the 3rd day of me exploring Pushkar fair, hungry, solo and cash strapped, I lucked upon a <em><strong>free \u2018langar\u2019<\/strong> <\/em>food bang opposite the quirky <strong>Rural Circus of Pushkar Fair.<\/strong> It seemed like God sent. <em>Langars<\/em> are free food for all , sponsored mainly by donations. What more can one want in life than free food along with free desserts? And who says there are no <strong>free lunches in this world?<\/strong> Drag them down to India.<\/span><\/div>\n<\/div>\n<\/div>\n<div><\/div>\n<div>\n<div class=\"\">\n<div class=\"_1mf _1mj\">\n<figure id=\"attachment_10306\" aria-describedby=\"caption-attachment-10306\" style=\"width: 922px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"alignnone size-full wp-image-10306\" src=\"http:\/\/asoulwindow.com\/wp-content\/uploads\/2017\/11\/img_3673.jpg\" alt=\"IMG_3673\" width=\"922\" height=\"614\"><figcaption id=\"caption-attachment-10306\" class=\"wp-caption-text\">Western and intrnational food is easily available on streets and restaurants. Incredible India!<\/figcaption><\/figure>\n<\/div>\n<\/div>\n<div class=\"\">\n<div class=\"_1mf _1mj\"><span>&nbsp;<\/span><\/div>\n<\/div>\n<div class=\"\">\n<div class=\"_1mf _1mj\"><span>The narrow lanes outside the <strong>lake<\/strong> and <strong>ghats<\/strong> is bustling with hotels, restaurants, religious shops etc. To my surprise, I found many restaurants selling dishes from around the world such as <strong>pasta, pizzas, lasagnas, baklava, hummus and pita bread,<\/strong> <strong>thai curry<\/strong> and of course good old reliable <strong>Chinese<\/strong> or should I say Sino Ludhianvi (The term coined by veteran journalist <strong>Vir Singhavi<\/strong> for the Indian Chinese food).<\/span><\/div>\n<div><\/div>\n<\/div>\n<div class=\"\">\n<div class=\"_1mf _1mj\"><span>I knew it had to do with the influx of <strong>foreigner tourists.<\/strong> Also catering to them were the restaurants with live bands or at least <strong>western music<\/strong> playing on their terrace garden <a href=\"http:\/\/asoulwindow.com\/2016\/12\/09\/people-co-live-rock-show-stand-up-comedy-and-great-food-new-in-gurgaon\/\" target=\"_blank\" rel=\"noopener noreferrer\">restaurant<\/a>.<\/span><\/div>\n<\/div>\n<\/div>\n<div class=\"_1mf _1mj\"><span>&nbsp;<\/span><\/div>\n<div>\n<figure id=\"attachment_10307\" aria-describedby=\"caption-attachment-10307\" style=\"width: 480px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\" size-full wp-image-10307 aligncenter\" src=\"http:\/\/asoulwindow.com\/wp-content\/uploads\/2017\/11\/img_3678.jpg\" alt=\"IMG_3678\" width=\"480\" height=\"614\"><figcaption id=\"caption-attachment-10307\" class=\"wp-caption-text\"><em>Pakodi<\/em> with potato curry and hot chillies.
